Aromatized wine-based drink with Visciole (Marasca Cherries) Marasco

Combed cordon and Guyot training system. Yield per hectare 25/30 quintals. Harvest of surmature grapes stored in small plastic crates during the first ten days of December. The fermentation starts in stainless steel barrels, then continues in French oak new barriques, until the ‘mutage’. The wine is preserved in barriques until its 3rd year.
Colour: intense yellow, almost amber.

Aromas of honey, dates, caramel and ‘muffato’ sensations.
Food pairings: biscotti, ‘crostate’ with citrus fruits jams, ‘crostate’ with thick custard, ‘cantuccini’ biscuits, goat cheese, pecorino and blue cheeses.

Marasco : why is it called so?

Il nome di questo vino deriva da quello della ciliegia, la visciola, una particolare ciliegia acida, simile all’amarena, ma più dolce e di colore più scuro. Il marasco è un particolare tipo di ciliegio acido (visciolo) ed è tipico della zona marchigiana. Alla preparazione a base di sciroppo di visciole e zucchero viene aggiunto poi il mosto nel periodo della vendemmia.
