The wine is born thanks to the rediscovery of the grapevine ‘Incrocio Bruni 54’, created in a laboratory in the region Marche by Professor Bruno Bruni from Sauvignon and Verdicchio, but not very much used in the past because of its low yield. The vine density is 5,000 per hectare at 230 m above sea level on calcareous clay soil, with southern exposure. Guyot training system, with new fruiting canes every year. Yield per hectare: 90/100 quintals. Grapes are hand-harvested and stored in small plastic crates in the first week of September.
Vinification of grapes separated from their skins, fermentation in thermo-regulated stainless steel fermentation tanks for 3 weeks at 15°C. Maturation at low temperature (about 9°C) for 3-4 months.
Colour: intense yellow.
Pleasant and slightly aromatic and with delicate flowery hints of acacia and fresh fruit.
The taste is full-bodied, structured, dry, equilibrated and persistent in the mouth with a pleasant bitter aftertaste.
Food pairings: perfect with pasta, fish, poultry, it also pairs with vegetables and pizza.
