It’s the evolution of Fior d’Acasia.
The vine density is 5,000 per hectare at 230m above sea level on calcareous clay soil, with southern exposure and training system with new fruiting shoots every year. Yield per hectare: 90 quintals. Grapes are hand-harvested and stored in small plastic crates during the third decade of August. Vinification of grapes separated from skins: cold cleaning of must in steel tanks. Fermentations in barriques and maturations on yeasts or fine sediments (tiny residual grapes skins) with weekly bâtonnage for 5 months.
Colour: intense yellow with golden streaks.
Delicate aromas of grapefruit skin, passion fruit and sweeter aromas of vanilla, caramel and honey.
Sapid and mineral sensations in the mouth, full-bodied taste and good acidity.
Food pairings: pasta with fish or meat sauce, seafood risotto, mixed fried fish, salamis, goat or blue cheeses. It also pairs with biscuits or short crust pastry when a sweet wine is not available.

Marche Igt Incrosio Bruni 54. More intense, full-bodied and robust version of the Fior d’Acasia, from there the decision to make the male name, closer to its true character.
